Thumbs up Chicken, spinach & pumpkin pasta

I made this for dinner tonight - it was so yum. Its hard to find recipes that aren't tomato or cream based, but I think this is a winner (Although DS said "I don't like that" to the spinach).

Penne/ short pasta
Hunk of pumpkin cut into small pieces
1 double chicken breast cut into small pieces ( I used 500g thigh fillets)
1 tsp olive oil
1 bunch of spinach (I used a bag of spinach from Woolies)
2 cloves garlic thinly sliced (I used less than this as my Dad doesn't cope with much garlic in food)
2 red chillis, chopped up nice and fine - leave the seeds in if you want it spicy or remove them (again I used less)
finely grated zest of one lemon
the juice from that lemon


YOU NEED TO:

* Drizzle olive oil over pumpkin & roast until done
* Cook the pasta in a large saucepan of salted boiling water - drain and keep warm
* Heat the oil in a massive saucepan over medium add the chicken and cook for until done.
*Add the rest of the ingredients and stir for a further 3 to 5 mins
* Add the pasta & roasted pumpkin to the pan and stir it through
* Serve with grated parmesan if desired

Mmmm- sounds the type of meal I like to cook and eat! Thanks for posting. There is no sauce as such- just the lemon juice etc??

Yes - the juice makes a sort of sauce.
