I remember seeing a recipe for sultana cake somewhere over the last couple of days, I can even remember what the picture looks like! Just not where I saw it... :wall:

Does anyone have any nice recipes for sultana cake? Preferably one that only uses 2 eggs as that's all I have and don't want to go out to get more :p

Shortbread/gingerbread recipes for Xmas treats to give away

I've decided to do shortbread or gingerbread Xmas themed treats to give away as gifts to our neighbours and DD's preschool friends.

I found this recipe for Shortbread stars with lemon glaze (providing our lemons are ready in time I'll have to find something to use them for!):

---Quote---
Shortbread Stars with Lemon Glaze

SHORTBREAD

2 cups plain flour
2 tablespoons rice flour
200g unsalted butter
1/3 cup icing sugar
1 teaspoon finely grated lemon rind
2 tablespoons lemon juice
Packet of silver cachous
GLAZE

1 cup pure icing sugar
2 tablespoons lemon juice, strained
Yellow or orange food colouring
Method

1.Preheat oven to 180°C and line two biscuit trays with baking paper.
2.Place the flours, butter and sugar into a food processor bowl and, using the pulse action, press the button for 30 seconds or until the mixture is fine and crumbly. Add the rind and juice and process for 20 seconds, or until the mixture forms a dough. Turn out onto a lightly floured surface and knead for 20 seconds or until smooth. Roll out to a 7mm thickness and cut out 6cm star shapes. Bake for 15 minutes, then transfer to a wire rack to cool.
3.To make the lemon glaze, place the icing sugar and lemon juice in a heatproof bowl over a pan of hot water. Stir until smooth. Dip the biscuits face down in the glaze and drain the excess. Dip a toothpick or skewer into the food colouring and draw lines into the icing on the biscuit before it set. Decorate the centres with a silver cachou.
4.The shortbreads should keep for up to 5 days in an airtight container.
---End Quote---
Do any of you cooking gurus have other recipes for shortbread or gingerbread you think are better than this? Thanks!

Help - I made these devine sounding muffins. Followed the receipe exactly - except I used muffins patty cases instead of putting the mixture straight into the muffin tin. So I've pulled them out of the oven thinking the look fantastic - all golden and beautiful on top - and I can see that they aren't cooked enough on the bottom.

Can I save them?? If so how?? They are for a picnic tomorrow......HELP!!

--------------------------------------------------------------------------------

Hello,

I have a big extended family. Usually I buy presents but I totalled the cost that it would require and nearly fell of the chair. Usually I just buy it over time so it doens't seem so bad. But this year we have bought a new house & we are stretched this year.

I came up with an idea to make individual fruit cakes, ice them, decorate and put it in a box or container as my gift to the extended relo's this year. Has anyone done something like this before?

Does nay have a tried and true recipe for it? How did you present it? Or any ideas? Where could I find a relatively cheap package or box to put it in that is good for food and looks nice?

How much would the ingredients cost? I'm lookign at making 10 mini cakes and did it drive you nuts? Lol

But i want to make them for my friends daughters 1st bday tomorow and was wondering if i should just make a normal vannila or buttercake and add passionfruit ?? how else can i replicate these lol

I've just finished making this cake and have documented the process in photos that I've uploaded into my FaceBook album.

DH and I watched MasterChef this week and it was inspiring watching the celebrity contestants struggle with this recipe. So I decided to give it a go. Yeah it was fiddly... but not too hard if you have the right tools. The most vital thing is the 20cm spring-form tin. They said on the show that you need a crepe pan too... but I coped fine without one. I love my cast iron pan for making crepes and pancakes... they never stick. If you make it: make sure you keep the temp LOW and only LIGHTLY grease the pan.

I also used powdered gelatine instead of sheet gelatine.... much cheaper... and having used both the results are identical if you do it right.

Anyhow... it's in the fridge now... i made it this morning so it has all day to set in the fridge.

Did anyone see this episode of MasterChef or have a go at making it?
